Cilantro Lime Chicken Skewers: 
2lbs boneless,skinless chicken breast
1/4C fresh cilantro, finely chopped 
Zest of 1 lime and juice of 2 limes
 Salt & pepper 
Wooden skewers 
1.Combine chicken, cilantro, lime zest and juice and marinate for 15min 
2. Slice chicken in half lengthwise and then into 1” cubes 
3. Skewer 5 cubes per skewer, season with 1/2 tsp salt and a pinch of pepper 
4. Grill for 15-20min turning on each side
